The next time you drive through gates at Beaver Creek, look left and you’ll see one of the quintessential restaurants in the Eagle River Valley. There’s no signage, but Mirabelle has been providing unforgettable culinary experiences for 40 years, and 25 years with Chef Daniel Joly at the helm.
Mirabelle occupies a historic farmhouse built in 1898, one of the original buildings in the Beaver Creek area. The restaurant’s rustic exterior, with its white-washed walls and wrap-around porch, illustrates the history of the Eagle River valley. Inside, the warm and welcoming vibe is perfect for a romantic evening or an intimate gathering. You’d be forgiven for feeling like you’re coming home — or visiting a friend who has infinitely better culinary skills than you do. Settle on a comfy couch by the fireplace or enjoy a glass of wine at the bar before taking your seat in the cozy dining room for what promises to be not just a meal, but a memorable evening.
Chef Daniel Joly, originally from Belgium, brings his European training and culinary expertise to every dish at Mirabelle. Trained in Michelin-starred kitchens across Europe, Joly honed his skills under the guidance of some of the world’s most renowned chefs before settling in Colorado. His philosophy revolves around using the finest ingredients — many of them locally sourced, some as close as the backyard greenhouse — and applying classic techniques to create modern, refined dishes.
Joly’s passion for farm-to-table dining is evident in every menu he curates. He works closely with local farmers and purveyors to ensure the freshest seasonal ingredients, which allows him to adapt his menu throughout the year — winter dishes highlight root vegetables and game meats. His creativity in balancing rich, comforting flavors with delicate, precise presentation has earned him a loyal following and numerous accolades.

The menu at Mirabelle reflects Joly’s roots in French cuisine, paired with the flavors of Colorado’s bounty. Guests can indulge in à la carte selections or opt for the “le gourmand menu,” a tasting menu highlighting some of Mirabelle’s iconic dishes including the Dover sole.

To start, salmon tartare is paired with a salad of radish and jicama, providing a light and playful opening. The crab cake with avocado smash, punctuated with compressed cucumber, heirloom tomatoes and basil, awakens the palate in all the best ways. Known for the Dover sole “meuniére,” Joly also offers a version with spinach and a lavender-infused coulis. Indulge in the Colorado rack of lamb (the pistachios are perfect punctuations) or revel in the play between pork belly and lobster — perhaps the ultimate expression of “surf and turf.”

For those looking to elevate their experience further, Mirabelle boasts an impressive wine list, carefully curated to complement Joly’s menu — and the staff is happy to help guests create the perfect pairing. With a focus on French and Californian wines, the list includes both well-known labels and hidden gems, ensuring there’s something for every palate.
Be sure to save room for dessert. Chef Nick Roberts delights in creating new versions of classic desserts, from an elevated baked Alaska hiding mulled wine ice cream to an elegant adaptation of the “Bûche de Noël,” each option provides the perfect sweet ending to a meal.
Mirabelle isn’t just a restaurant — it’s a destination for food lovers, a place where every meal feels like a special occasion. Whether you’re arriving fresh from the slopes, are a couple celebrating a milestone or a family looking to create lasting memories, Mirabelle offers an unforgettable experience for the heart, mind and stomach.
