lsa Vazquez was searching for a potential future parking spot for her family’s taco truck.

The led the Sibley resident to the front of the former Downtown Grounds building at Fusion workspace at 916 Third Ave. in downtown Sheldon.

While the spot seemed like a decent location for the truck, the coffee shop appealed to Vazquez, who worked at a bistro in Texas. Downtown Grounds closed in February 2024, but the equipment was still there, and the space was ready to rent.

Vazquez talked it over with her husband, Roberto Morales, and decided to go ahead with renting the space to create a new coffee shop in Sheldon.

My Tasty Coffee Shop, which offers drinks and food, opened its doors on Feb. 17.

“Everything’s been pretty good and we’re doing good business,” said Vazquez through a translator, her daughter, Samantha Morales. “We’re happy to be here in Sheldon with pretty much a family business.”

My Tasty Coffee Shop is open 8 a.m.-5 p.m. Monday-Friday and 9 a.m.-2 p.m. on Saturdays. The shop is closed on Sundays.

Vazquez gets help from her sister-in-law, Gabriela Morales with 16-year-old Samantha and her 14-year-old sister, Renata, helping after school. Both daughters attend Sibley-Ocheyedan High School in Sibley.

The family should have it’s taco truck, which will be appropriately named My Tasty Tacos, operational in April, allowing for Taco Tuesdays with My Tasty Coffee Shop. The truck will not just be parked in front of the coffee shop as it will be making trips to other towns in the area.

Vazquez said it was fate that led them to open the coffee shop since it was not in the family’s original plans.

“I am very romantic, so I started to see the signs and I started to get drawn to it,” Vazquez said. “If it’s the right path, it’s going to happen. It’s not something that we decided on, it was more like it crossed our path.”

The drink menu features the typical coffee options from lattes, mocha, cappuccinos and cold brew. My Tasty Coffee Shop gets its coffee beans from Brew North Roasters, which is at 126 N. Washington Ave. in Sheldon. The company was started by Matthew Olsen along with his mother, Patricia.

The shop also has tea — chai, matcha and bobba — along with smoothies and mocktails.

“So, what we were trying to do with the menu is we know the originals, kind of like the coffee and Frappuccino and everything, but we also wanted to bring something else that’s new, since things are always changing around here,” Vazquez said. “So, we do kind of like a coffee targeted to adults and like the mocktails and smoothies to the younger generations.”

Samantha said that goal has been working well to start and the mocktail menu will see constant changes.

“We have had a schedule where we notice adults come in the morning and the younger crowd comes in the afternoon,” she said. “So, that’s perfect for bobba and those smoothies. The younger generation can get bored easily so we will try and keep it new.”

My Tasty Coffee Shop has a Facebook page which will feature any new drinks on the menu.

The shop’s food menu offers salad, wraps, paninis, crepes, breakfast burritos, cereal and yogurt. The paninis options are chipotle, Italiano and chicken and there are chicken bacon, ham and bacon, lettuce and tomato wraps. The three salads are sweet, chef and chicken. The breakfast burritos will change on about a weekly basis.

Samantha said her mom wanted to give a Mexican flavor to some American-type food.

“The chipotle sauce she does herself and it’s a little spicy. The chicken, we make it with a little more spice to it for a little more flavor,” Samantha said. “I do like how everything has more of flavor to it with the spices that we add, and all of the flavor added to the chicken and the meat. It does make it more ours.”

Vazquez also makes homemade baked goods for the shop like cupcakes, cookies and more.

“She has been baking for quite a while,” Samantha said. “Sometimes she would just do treats for the house. So, she wanted to bring the treats from the house to here to make it feel a little homey. It’s kind of like she’s back home because she brings the menus that she did back there into here to basically make her feel like it’s her kitchen.”

Vazquez has settled into a rhythm at the shop. It was a little fast paced to begin with, but she’s found her groove.

“It’s more calm now because I have more of a system to it,” she said. “Other than in the beginning where it was more fast paced and trying to get into a rhythm. Now, we’ve got that rhythm, and it feels a lot more calm, fun, relaxing. Now, what we’re looking for is just making things better.”
